VinEataly is a refined enoteca where tradition meets modernity, brought to life by Marco Pietrobon and Fabio Colantoni. Marco, with a wealth of experience in the global hospitality industry, opened his first restaurant in Sydney in 2005, quickly earning widespread acclaim. He later opened Jamie’s Italian in Perth, WA, and worked as a manager at the Perth Convention Center, Cable Beach Resort in Broome, WA, and the prestigious Vanitas in Palazzo Versace on the Gold Coast. Marco’s journey also led him to Isola Bar & Cibo on Rottnest Island, where he further honed his craft before returning to Perth to open VinEataly in Dalkeith with Fabio.

Fabio, a celebrated chef with years of experience in Michelin-starred and award-winning restaurants, opened a pasta shop in Perth in 2014, followed by a culinary café in the same city. With his expertise in the kitchen and Marco’s refined approach to hospitality, the two have combined their decades of experience to create a unique dining experience at VinEataly. Fabio’s culinary mastery blends traditional Italian flavors with a modern twist, while Marco’s warm, elegant service and his passion for sourcing the finest Italian wines, sourced through his discovery travels across Italy, carefully selecting wines to bring back to WA, enrich the overall experience together, they’ve created a space that celebrates authentic Italian cuisine and exceptional service, offering a true taste of Italy in the heart of Western Australia.
